One very plausible explanation I've read is that the lab obtained samples of the virus from that mine/cave where several workers died after exposure. They attempted to either work out its gain of function or attempted to create a bat vaccine out of it, and it escaped the lab. We are lucky it was not worse. We have to stop tempting disaster with this stuff before it kills us all.
