I worked a shut-down at the refinery in Kenai. I was young and single, had the time of my life, seemed like all the guys were on the north slope working. I went out on the river with an Indian guild in a small boat, he put me onto a 45 lb King, he cleaned cooked and delivered to the refinery gate for lunch. I like to cure then cold smoke the salmon (lox) ..... fresh bagel with lox onion cream cheese and capers. I think sockeye would make good lox, the oilier salmon works best for me.
