Just as the use of fertilizers is not optional (people would starve)

It is optional but more expensive based on the inputs used.

For instance today farmers do not summer-fallow with a plough like in the old days, they chemical summer fallow with a spraying unit.

When we exceed the natural balance point, science is no longer a friend but the enemy.

Shallow water aquifers have been poisoned by farm chemicals and so have lakes and streams from run off, not to mention what city dwellers spray on their lawns to keep them free from dandelions. And not to mention the toll it has taken on farmers and crop-dusters who have died of weird cancers from handling concentrated chemicals not wearing required protective gear.

100 years ago we could farm safely, what happened?

There is price to be paid for growing modified plants that are addicted to chemicals, the full price may not be worth it.
