This is a great quick dinner- I use 2 cans of black beans and no meat -but I do add white onions cooked in bacon fat. Whenever I cook bacon I fill the pan with white onions to bake chopped white onions in the bacon grease- and then I bag the onions- 1/2 cup per baggy- to add to soups, quiches and anything else! So delicious. I never want to waste bacon fat.

This tortilla soup is loved by everyone in our family. I garnish it with fresh chopped cilantro and sometimes avocado cubes and sour cream (as well as chips and cheese)
