I got some great blue cheese (raw milk, delicious) and I made a quiche with some of it- couldn't find any recipes I liked so I made my own. It was great (family liked it so much I will make it tomorrow- but am going to put walnuts in tomorrow).

5 large eggs
3/4 C milk
2 heaping Tbs cornstarch
1/3- 1/2 cup crumbled blue cheese
pepper (about 1/2 tsp)
1/4 C sauteed white or red onion (I saute mine in bacon fat)- cool them down before adding
pie crust

I whisked the eggs and milk until creamy
add all the other ingredients
whisk well
pour into raw pie crust - I use a deep dish pie plate- this quiche puffs up
bake about 40 minutes at 350 (keep and eye on it since ovens differ)

When done it will puff up and the top will be solid when tapped lightly with a spoon
