Yes, there is only a voltage difference.

I would find it hard to argue that Earth ground wasn't a good reference.

The electric field off the human body resides on the surface.

As I understand it, that charge in the 'typical' living condition is a couple to several volts.

Grounding to Earth brings it close to zero. Have no idea if it is helpful.

The associated current is miniscule - nano amps ...

If what is claimed about anti-inflamatory properties is true - and that is a big question mark -then it seems like introducing this electrical flow from your body to ground for several hours while you sleep makes perfect sense.
