The Gouda I had (Jake's) was slightly chewy, moist, and full of nutty salty goodness. It's a really beautiful cheese. I bought some for the family (and me). There was also a very good cheddar on the tasting and a wonderful sausage. I will post the names for you after I check them. Jake's was the easiest to remember :-)
