Doctors have told my wife that her recently diagnosed autoimmune disease was caused by the vaccine.
According to this study, COVID-19 itself is associated with a higher incidence of autoimmunity:

COVID-19 associated with increased risk of developing various autoimmune diseases and risk could be attenuated by vaccination

The vaccine also raises the risk of autoimmunity, but at a lower rate than the coronavirus itself.

This study was conducted last year, and it represents just one data point, so it's too early to make any conclusions whatsoever.

Don't take this the wrong way, but I believe the doctors didn't tell you the full story, or you may have misinterpreted what you said.
