Be aware that High Sierra is the first macOS to use APFS, the new file system superseding HFS+ and designed for solid state storage media like SSDs.

Upgrading to High Sierra does not automatically convert Mac boot drives to APFS if they have a hard drive installed, but it will for SSDs. APFS was never optimized for traditional spinning hard drives and it's better to leave them as HFS+ for better performance.

Apple has released iOS and iPadOS updates to fix syncing issues with iTunes and older Macs in the past, so that is a possibility. It's clear they don't test anymore with iTunes syncing or these problems wouldn't occur in the first place.
