Ventura is your best bet. I was running it on my 2019 iMac until about 3 weeks ago.

I "upgraded" to Sonoma because I knew Sequoia was right around the corner and I didn't want to play any shenanigans with Apple installing Sequoia for me without my consent. That happened with Sonoma earlier this year to some users, they woke up to find a bug in Apple's update settings had installed Sonoma overnight for them, with no easy path to downgrade if they didn't have a robust back up strategy in place.

I also had a relative tricked into installing Sonoma by Apple's increasingly intrusive notifications to do so, and I am the tech support person for them, so I need to know how it works.

While I'm getting used to Sonoma and it has some nice features, it still has some bugs that haven't been patched and one or two new ones introduced in the last three updates. Annoying!
