Most of my experience is on the mechanical end, tho my grandfather did do 90 days during prohibition for moonshine! <G> I do have a phd chemist on staff here and I'm going to ask him about the chemical reaction, etc. Yes, the fuel savings would be significant. In my experience the major point of problems was not the heat requirement, but the demand for cooling! After cooking the potatoes the mash had to be cooled very quickly or the bacteria ate all the sugar. That was a real problem that required huge quantities of water and cooling capacity. We had to take a 1000 gallon vat of oatmeal like substance from boiling down to 90 degrees in a matter of 2 hours. It caused us real grief!
