True ambidexterity has nothing to do with which hand you use to write or do anything with. It is a brain wiring issue, just like right handedness or left handedness. When a right handed person loses their right arm they don't become a left handed person. They are still a right handed person who have learned to do things with their left hand.

Incidentally, there are disadvantages to being ambidextrous. The proficiency they gain is usually inferior to what a right handed or left handed person can master. There are also, if I remember correctly, other disadvantages related to not having specialized circuits.

PS When I was a kid I taught myself to write in mirror images with my left hand. Then I started writing in mirror with my right hand. It wasn't hard to learn. I stopped it when I found myself confused what the real orientation of letters are.
