I visited Japan extensively in the 1980's and 1990's when the Japanese car companies were starting to build capacity in the USA.
The restaurant (in Tokyo) that served the raw lobster initially brought out the live animals (big 3-4 lbs) and showed them to everyone, then a few minutes later they came out with the lobster on large platters with the claws gone, tail severed and opened with the meat from the tail sliced into small pieces that you could grab with chopsticks. The server squeezed a small amount of lemon on the sliced meat and it moved like a bed of worms.............very fresh.mad2
