I used to go to Chicago often for trade shows and international trade delegation meetings, and for about a decade or so, we stayed at The Ritz when at these gatherings for convenience and because we had a club membership.

Early on when we were dating and then married, my wife would occasionally go to some shows as well. She was a spokesmodel who would meet and greet people in the booth when everyone else was busy. In 1994, I had knee surgery on a Friday and started setting up for a trade show the following Tuesday. She came along to help me deal with stuff at the end of the day while I was icing my knee, laying/sleeping on the floor while keeping it elevated on a bed, and stuff like that.

Anyway, there was this great french bakery in the mall attached to the hotel. Often times she would bring me chocolate croissants from there in the morning to eat.

Sadly, the last time we stayed there maybe 6-years ago, the bakery was gone. Now I found what is probably the recipe that was being used to make these croissants. Here it is:
