I think there is some aversion to ostrich meat, even among nonvegetarians. There are ostrich booths at the produce markets here, and it does not seem to be a big seller. A very good IDEA, but somehow in practice I don't think most people ever have the urge to jump in the car late at night and go buy some, unlike the primal cravings for cheeseburgers and fries that well up involuntarily in most red-blooded Americans from time to time.

I will ask Jane if she has any recipes to share. I hope she responds.
