Janice, the way to get all of the goodness out of pomegranates without staining your hands is to submerge the fruit in cold water and gently break it apart under the water. Then I think you could avoid rubber gloves entirely.

Did you know that by eating a single seed of the pomegranate offered her by the wily Pluto, Proserpine was obliged to return periodically to the infernal regions, leaving earth for six months in the cheerless embrace of winter?

Or that from the pomegranate rind is made an ink that one writer described as "unfading till the world's end?" From the rind, also, is brewed a bitter draught that many an adventurer and explorer has found invaluable in combating tapeworm or dysentery?

This is not really a salad, but must sparkle like God's own jewels when the presentation is right--make small balls of cream cheese and roll them in pomegranate seeds. That would be beautiful for the Christmas season, perhaps on a bed of poinsettia leaves and garnished with a few of the flowers as well for a really red-and-green statement?
