Zen Of 'Baby-back Ribs'...
Last night, I decided the true wisdom entailed purchasing 4 racks of ribs. When I arrived home, they seemed incomplete and wisdom was not served. So, seeking enlightenment, I set them to marinating in 'Shiner' beer,tarragon vinegar,onion, and various herbs and retired for the night to meditate upon perfection.
This morning, I saw that perfection was not yet served, so I basted them in marinade and pondered a correct fire. About noon, Enlightenment struck and I started a fire of charcoal and wood of the hickory upon the smoker. After about an hour, the correct thing seemed to be to make an offering of these ribs upon the smoker. I returned, periodically, to see if the gods of BBQ were pleased. They deemed that further layers of sauce were needed. About 5PM, the gods told me that corn on the cob and baked potatoes would indeed please them. A further offering of a salad - with feta,basil,olives, and ripe tomatoes was deemed admirable.
A gathering of the devoted followed and a description of the orgy of ribs would surely get me banned from SI.
