Hardrives...stringging...mirroring....HELP

I'm trying to figure out what all this means. I want
a fast and reliable hard drives and am trying to configure
the best system for my future computer.

One techi told me the following (rough figures) Could you verify?

Various Hard Drives:

ide.............. 16 mbs
ide Ultra DMA.... 33 mbs..Maxtor..mobo also has to support Ultra DMA

SCSI II........... 20 mbs
SCSI II wide...... 40 mbs

Ultra SCSI........ 40 mbs
Ultra Wide SCSI... 80 mbs

So what would be my best Hard Drive configuration using Windows NT?
Please explain stringging and mirroring. What brand, how many, and what gigs would you recommend? If you could, give several different
options/packages and their corresponding round about prices with pros/cons. I'm asking for alot! Your expertise is much appriciated!

I'm building a computer for daytrading. I don't know how important it
would be to have the speed of SCSI.

Also, what can I do to increase cache up to or above 1 gig?
The same techi I talked to above said he saw a computer with
4 gig cache. He said that CACHE would be important for my
streaming data of real time quotes and charts, etc.
