Dell does a lot more than slap the parts together, they do extensive testing and configuration around the systems they build, before they are offered for sale. With the Intel components they are assured of advance engineering information and stability of the parts. Sure, they could get another supplier and do the same for AMD parts but I think it would disturb their close relationship with intel.
