Carol, I was pretty amazed that Linda died. I thought a lot more women were being saved, and she must have had the world's best medical care, besides. It's a really nasty disease, something most women are terrified about just under the surface.

I read an article the other day about two teenaged sisters, fifteen and seventeen, who had their colons removed because after their mother was diagnosed with colon cancer- the really virulent kind that is not only genetic but almost certain--they decided they would rather do that than live in dread and fear. Very much like women at high risk for breast cancer getting their breasts removed. I don't know how to say this delicately, but after all the years I have spent in gym dressing rooms, I can say that I think women's chests where they have had both breasts removed are sort of cute. I think the weirdest thing would be having just one!!!

And of course after all that, there is no graceful segue at all into my favorite recipe from Linda McCartney's cookbook, so I won't even try. But this is really excellent for a quick lunch with a mixed green salad, or football game snacky stuff, or for a group of children:

Mozzarella French Loaf

1 long loaf French bread (sourdough is best)
1 pound mozzarella cheese
1T butter, melted
2 clovers garlic, chopped
1 tsp. fresh oregano (or a pinch, dried)

Pre-heat oven to 425 degrees. Make diagonal cuts into the French loaf all the way along its length, at 1/2 inch intervals, but without slicing it all the way through. Place the loaf on a baking tray.

Push a slice of Mozzarella into each cut. Brush the melted butter over the loaf, and sprinkle the garlic and oregano over all.

Bake for 10-15 minutes, until crust is lightly browned and the cheese is bubbly.
