Christine:

". . .the everyday Irish foods like milk, butter, produce and meat are much more wholesome and fresh than in America. And they do not allow antibiotics and hormones in their meat and milk like we do. They do eat way, way too much meat, however, and also too much refined sugar and fat."

This is the point I was trying to make. I agree that their earlier diet was even more healthy. They may eat too much meat, but it is a healthier meat than most found in the States. As for refined sugar, again you are correct. Ever read an excellent book called, "Sugar Blues"? Fats we've already discussed. We both agree that unsaturated and mono-saturated (like olive oil and palm oil!!!!) are the healthiest. Also cold-pressed oils and non-heated oils and all oils with no transfatty acids. Most Americans are still unaware that high quality, cold-pressed olive oil and the judicious use of butter (without hormones or antiobiotics added) are better to eat than hydrogenated high transfatty acid margarines. They still promote margarines on TV as healthy for the heart! Talk about false advertising!! Hah!
