There are other ways to insure safe product besides heat treatment, which I think is what your are suggesting when you refer to pasteurization. What FDA requires after review of the possibilities is anyone's guess, but I am sure they will take into consideration all modes of treatment, many of which will not cause deterioration of the fresh flavor characteristics. I don't know what FRSH is currently using for the processing, but I think we can be sure that HCCP procedures are already in place that, if followed, give inspectors confidence that a safe product is entering the market.
