X, I have rarely, if ever, seen a waitress in a coffee shop or a bartender in a small bar stay more than a year. Most of them either move on to a larger and better paying establishment or change professions entirely. My wife and I have been stopping for breakfast at the same diner about five times a year on our way to Vermont for the past ten years and have NEVER been waited on by the SAME waitress twice. Anyone who thinks they will be able to pay a mortgage or send the kids to college by working at the local diner is crazy. Jim
