RE:"I don't see OATS opening in Texas in response."

The reason Wild Oats isn't opening stores in Texas is because there is no market for them. Whole Foods opened a bunch of stores all over Texas in the mid 90's and most of them are dogs. Whole Food's cash cow is Bread & Circus in the northeast and their stores up and down California.
While they are not opening stores in Texas they have moved forcefully into the Chicago market. With three stores open and three stores on the books look for Wild Oat's to stoke the competitive fires in this lucrative market.
Having said that I must say from past experience going to a competitor's market is often times difficult. Even if you offer lower prices and better products, customers are often slow to change their weekly shopping habits. Both companies will continue to do well, Whole Foods being bigger and stronger, while Oats seems to have mastered the 'fast break' approach to opening stores and acquisitions. They are leaner and more aggressive in their approach.
Just my opinion.
