You could take a 1 - 2 CPU system now and test all your software applications, drivers, etc. against it, to make sure Xeon is 100% compatible. Later you could take an upgrade to a 3 - 8 CPU system, wrap up your compatibility testing, and then go on line with it. Happens all the time (start evaluation on a partial system and complete it on a full blown one, on the way to going into production).
