You dont have to care for IRQ's when using a multi monitor setup. The PCI bus allows IRQ sharing. So, if you are using one graphic card for each monitor they all have the same IRQ.
Another way is to use a special multi monitor graphic card (eg Appian's jeronimo) which needs only *one* pci slot for e.g. 4 monitors.
