Gerald, I would agree that it is surprising that Whole Foods would adulterate their ground beef. However, business is business!!! I am afraid the profit motive is a very strong one. And I think it is important to remember that butchers everywhere learn from more experienced butchers, and that apparently this is a widespread meat processing practice. To me, it is yet another argument in favor of avoiding red meat.
