Vets use the needle, and it's really quite gentle. Poocher goes quietly to sleep - and that's it. No muss, no fuss, not a twitch.
Pounds use gas. Kinda unpleasant for both animal and employee, but cost factor is much lower. Since most pounds run on the most threadbare of shoestrings, that's important.

We have had zebra finches fall terminally ill, and I have etherized them. I hated doing it, but it was an act of mercy, and the birds were far enough gone that they actually relaxed into the ether.

I must be feeling a little morbid
