Does this mean that the M1 and M2 are bug free or just not documented? Also, do any of the Cyrix processors have a RISC core?

Apparently no bugs worth talking about. Cyrix cores are the least RISC-like in the industry. They execute native x86 instructions with no intermediate translation steps (unlike PII, K6 and C6.)
