Theoratically, the kernel of an OS should be slim and fast. But when you talked about product that sell to average comsumers, that is totally different issue. Do you want to buy a slim OS for $50, a browser for $30, a email client for $10, a text edit for $5, a media player/CD player for $10, and the list goes on and on? How much that cost you? Once you bought all those stuff, you have to go through all the hustle to install them on OS and hope all those stuff would work together. Do you expect average users like your grandma to do all those? If that was the case, computers would still be the mystery toys of some computer nerds. It would never be as popular as we have now.

A consumer product is a lot different from a CS class project.
