Coral trout is a truly delicious fish to eat. A saltwater fish about the size of your regular trout, has electric colors including yellow and blue, on one trip to Cairns a group of us decided to rent for a day a deepwater fishing boat, as it was out of season for marlin (we had no intention of chasing marlin, I don't have a clue about fishing, we just wanted to go joyriding out on the barrier reef). We had a day on the reef I will never forget, we stopped in one spot and caught several dozen of these fish. To cook, wrap in foil with mushies, onions and other veggies and throw on the barbie. You will NOT find these fish in any grocery store, anywhere. Another interesting Australian seafood wonder we discovered in Perth while I was speculating on one of those small miners digging in the never never is called "scampi", looks like a cross between a shrimp and a lobster, and is the size of a very small lobster, comes from the NW Shelf off the WA Coast and is very seasonal. Had it several times in a restaurant where Alan Bond hung out before he almost sent Australia broke and destroyed the Aussie stockmarket.
