There are degrees of assholeness/assholity. "Attitude" connotes just minor assholity, with the potential to explode into full-blown assholity at any second. Seriously though, I don't think "in denial" is so offensive. It's a pretty pithy way of describing someone who refuses to accept information that has proven to be true. I think what bugs you is the tendency to overuse it, especially where it doesn't accurately apply, maybe? And get that period inside those quotes! Grammar with attitude.
