Hi Scott, Well, your salmon may be radioactive, but ours have a delicate flavoring of PCB's!!! Most Great Lakes salmon are not spawned here, but come from hatcheries. Biggest I ever caught was 23#. This old-timer took over a half an hour to land. Worked my arse off for that dinner!!

We also have rainbow trout, lake trout, and brown trout during the season. I didn't get out on the lake to fish even once this year. I heard that it was a good season, though.

Favorite fresh salmon recipe:
Clean whole fish, (save roe if it's a female)
On heavy foil, place pads of butter and lemon slices under the length of the fish
Fill fish cavity with onion slices and butter pads
More lemon slices and butter pads on top of the fish
Close foil around the prepared fish and cook on the Weber for about 5 minutes
Open the foil and poke holes in the bottom of the foil
Replace the Weber cover and let fish smoke for an additional 3 minutes
Serve!!

The skin will peal back and you can just dig in!

Recipe for Salmon Roe to follow!!

Best regards, Tom
