There is no comparison at all please read the following passages.

Exodus 3:4 And when the LORD saw that he turned aside to see, God called unto him out of the midst of the bush, and said, Moses, Moses. And he said, Here am I.

Exodus 3:14 And God said unto Moses. I AM THAT I AM: and he said, Thus shalt thou say unto the children of Israel, I AM hath sent me unto you.

It's obvious that Moses is not referring to himself as the I AM, only God is. But read what Jesus says about himself.

John 8:58 Jesus said unto them, Verily, verily, I say unto you, before Abraham was, I am.

Are individual Muslims allowed to choose what they want to believe out of the Old Testament or did some leader spell out what one may or may not believe?

God knew Jeremiah before he was formed in his mother's womb. >>>

God lives outside of time and already knows the beginning and the ending of all matters. Prophesies were foretold before the actual events took place but they still had to be worked out in their course. Moses fortold of God raising up a prophet greater than himself (Jesus) but many things still had to be fulfilled prior to Him being born in manger.
