At our Wild Oats,the juice bar has just begun to use kefir for their smoothies.Because of the consistency and it's greater health benefits , it is now being used. Required reading for all on this board should be -Probiotics-Nature's Internal healers by Natasha Trenev (Avery Publishing). I found it at Barnes and Noble.Author beleives probiotics will be in 2000 what antibiotics were to medicine in the 80's. Yogurt consumption increased fivefold in the 70's. If probiotics catches on, then Lifeway will do extremely well.
