As memory serves me, and granted, it's so faint that you were probably undergoing the pangs of puberty, it's so far in the long distance past ............
you need to marinate the porkies in a mixture of buttermilk, salt water, vinegar, onion, and garlic .........
and
then
grill them ......

Of course, I know that you noreasters are a lot more aware of the correct procedure in which to prepare the gifts or the ocean ...........
and I don't mean to insinuate that any drygulchers from Tx could possibly have any possible ................
errrr, well, just try it .........

You might add the juice or an orange,a lemon, and possibly with a shot of japeleno (or habernano) to the marinade ........
overnight is always good ..........
