I remember one of my mother's Sunday night dinner favorites. She called it Welsh rarebit. Well I am here to tell you her secret recipe was a can of Campbell's Tomato Soup and melted Velveeta, poured piping hot over toast points. Hmmmmm. Hmmmmm. Good. - Yikes. I could never do that to my family. But it was easy, which I guess was why it got served on those busy Sundays.

I remember I also wondered for the longest time where the "rabbit" part came in.
