Jeez, this raita stuff is super exciting. (Did someone cough?) It's just, well, how often do raita raters get together. ("Plenty.") I don't think I've ever met another raita.....enthusiast.

We make one I'm sure you're friends with:

You start with some butter (or ghee, 'course), melted in a pan;

mortar-crush (lightly) some cumin, cardamom, coriander, cayenne,

add them to the butter,
stir in two mashed bananas,
remove the pan,
stir in two cups of Nancy's yogurt or "Buffalo yogurt".

Chill.

Serve with any appropriate hot thingy. We do this one with cauliflower curry most. yum.
