You have more patience than I do; I'd never get through three days. Like to cook it all day, refrigerate at night, scrape off all the fat in the morning (especially with pork) and cook it till lunchtime. Good with cheddar or monterey jack; I sprinkle chopped sweet onions over it, but I'm a little odd.

Buffalo here are domestic water buffalo, still use 'em on the farms and out in the bush. Mostly pretty placid, but once in a while a horny male gets wild and makes a mess. They can make a pretty good mess when they get around to it.

Meat is real tough, real lean, but has good flavor if you don't mind cooking the hell out of it. We get great country chickens out in the farm zones. Half wild, a little stringy but they taste a hell of a lot better than the pumped up factory birds.
