Hi Bernard, I am not familiar with any of the big companies that are developing probiotics. All that I can say is that in my opinion based on what I have been reading, 'probiotics' will be big in the coming years. Especially when more research is done and published on them. It will take consumer awareness to make the probiotic industry take off.

When I mention kefir and probiotics I don't mean to say that the only reason kefir will sell or be a hit is because of its probiotics. First and foremost it is a unique and delicious beverage that just happens to be very good for us. I am sure that most people who now consume kefir probably don't even know what probiotics are. They probably drink it just because it tastes so good.

About the sugar in Lifeway's kefir. If there wasn't any sugar or something to sweeten it, I wouldn't drink it because it would be way to sour for me. The lactic and acetic acids are what make it so sour. Do you drink the plain by itself?

Once Lifeway's kefir is in a supermarket in your area you will be able to get all the plain and original kefir you want. The Publix supermarkets that carry it in my area have 9 flavors including plain and original plain. Also if you are concerned with sugar you could start using Lifeway's kefir culture starter and put only the ingredients into it that you want. I ordered some last week and I hope to get it any day now. I want to make some black rasberry kefir and apple cinnamon.

Speaking of sugar, its in almost everything today. Honey is one of the healthiest sweeteners but it is expensive and it has a flavor that doesn't go with everything.
