CobaltBlue--Living in California I had the benefit of being able to taste the better varieties available here.
We had good wine here but to be honest the rest of the country wasn't that interested. When I got outside of the state the domestic wines being carried were Mogan David and something a little sweeter.
There are some fabulous food selections available now. I think you are absolutely correct that the selection has improved dramatically. It will be a matter of time before some wonderful creations come out of the availability of these new ingredients.
