I know some people dont use water...my mom did so , so do I...To make extra water for the gravy if it evaporates, I boil the neck, livers, etc on the stove. I add that water to the turkey pan and you dont dilute the flavour. Nobody in my house would eat that stuff anyway so it might as well make better gravy :) carole
