Actually that's a great recipe, either prosciutto or even plain old bacon. I like bacon better because it has more flavor(prosciutto is usually sliced very thin and has less fat). But I don't just put the turkey on top. I cook the bacon or prosciutto on the stove top in the turkey pan, then when all the fat and flavor is rendered, place the turkey on top. I baste my turkey fairly frequently, so the flavor really comes out. I usually put the cooked peices in the cavity as well.

For my Thanksgiving turkey, I rub butter(yes butter-not lot just a bit) all over the turkey, then add salt and pepper and paprika all over..adds a hint of flavor and really makes the bird look like it has an all over golden glow. A hungarian friend told me abot turkey this way , and it's the only way I do my holiday turkey.

Never have tried the cream cheese in the mashed but I bet it is good, and less fat than butter for those who are health conscious.
