OT: Some culinary questions.

My brother and his buddy bagged 11 ducks last weekend. (Not sure which species, if its important I could find out.)

Do you have any to-die-for recipes using only the breasts? (That's all he brought out of the field)?

What menu would you build around them (ie. appetizer, sides, dessert)?

I am an expert grilling pork and beef; but this is my first year for wild game. Though I must say, I like learning. Those doves we had back in August, now they were to-die-for: wrapped in a strip of bacon and an onion coat to stay warm, then baked... ;-)
