T, My family, on my Mother's side, were major league frog giggers in California's central valley. I never heard of them cutting off the legs while the frogs were alive. However, I did hear that the real reason my uncles did it was to get their dates alone in a dark place where fighting off their advances could tip the boat. <G> But we had some nice eating.

Since then, I have had frog legs all over the world. The ones I ate in France were like the Swiss ones you describe. I agree with your assessment. At The Tonga Room in San Francisco, they make a Polynesian sauce for the frog legs. O.K., but not what I was looking for. In Arkansas, they came close at one restaurant, but they just can't match my Grandma's cooking style.
