Allan--I should have gotten back to you earlier on game cooking. I don't normally cook my ducks, I give them to my folks who are big fans. For dove, I soak overnight in buttermilk, then fry in butter with mushrooms, when they are done add a cup of sherry (not cooking sherry). For quail I remove the meat from the breast, cook in butter with mushrooms and add a cup of white wine (I prefer Chardonnay) when they are done cooking. Serve the ducks and quail with a mixture of rice and wild rice. Fish I love to blacken Cajun style. On the topic of the market, I am shorting CORE and holding short on GERN. All the Best Druss
