Hi people. I am looking for recommendations on pretty good knives what for to get MJ for CMAS. I said knives were part of a good kitchen, but I didn't say we had any or else I lied about it, and one other thing, I forget. It's a pretty big commitment, and money, and decision. I asked Alex by PM, and I hope he doesn't mind me paraphrasing here, and gee I know we once discussed this before, but:

Cooking?
J.A. Henckels "Four Star" chef's knife. I have a nine incher.

Do you get the Professional Cutlery Direct catalog?

Also highly recommended (but expensive - especially in upkeep; you'll need a diamond or ceramic hone) are Santuko pattern knives from Global or Masahiro. They have wafer-thin blades with a very hard steel. I know you love working with veggies,a nd these are the blades for that!

We're pretty frugal, at least since I got into the market, and I'd like to spend no money. No, wait, say 50 bucks? Can that be done? I hear Alex laughing. Say 150.00 for three? You know, cheap knives. But good. She should really have the best, as she is the best cook in Oregon; but if I got her the best, she would have a freak accident at school, with an overhead projector, and come home unable to use her arms ever again. If it was just the right knife, or I had more to spend, I would spend 100-125. But that's pretty scary.

Thank you.
