CRAWFISH FRAZIER

INGREDIENTS:

1 BUNCH GREEN ONIONS
1 YELLOW ONION
3 STALKS CELERY
4 CLOVES OF GARLIC
1 BELL PEPPER
1 LOUISIANNE ETOUFFEE MIX
2 1/4 LB STICKS MARGARINE
1 1/2 CUP MILD CHEDDAR
3 BOX JIFFY CORNBREAD MIX
2 LB. CRAWFISH TAILS
2 8 OZ. CANS TOMATO SAUCE
1 tsp. SALT
1 tsp. BLACK PEPPER
1/2 CUP JALAPENO PEPPERS
1 CAN GOLDEN MUSHROOM SOUP

DIRECTIONS:

PREHEAT OVEN TO 400 DEG.

CHOP VEGETABLES AND ADD TO MELTED MARGARINE IN POT. STIR IN ETOUFFEE MIX . ADD TOMATO SAUCE , 2 CUPS WATER AND BRING TO SLOW BOIL. ADD SALT AND PEPPER. STIR IN CRAWFISH, REDUCE HEAT AND SIMMER OCCASIONALLY STIRRING TO AVOID STICKING. PREPARE CORNBREAD MIX ACCORDING TO DIRECTIONS. POUR HALF OF CORNBREAD MIX INTO 8 X 12 X 2 BAKING PAN, ADD CRAWFISH MIXTURE. SPRINKLE CHEESE AND PEPPERS OVER MIXTURE AND ADD REMAINING CORNBREAD MIX ON TOP. BAKE FOR APPROX. 20 MIN. OR UNTIL GOLDEN BROWN.
