Hmmmmm...well, as a semi-Texan, you've got experience I haven't. Still, there are in my view very few situations in which hot peppers are absolutely wrong.

Wierd thing: I've got a bunch of bags of various dried peppers. Made chili a couple of weeks ago, and when I checked 'em out they were all fine, except for the habaneros, which had been completely devoured by moths. Progeny of Mothra? God knows. They'd chewed their way through the plastic bag. Creeped me out.
