MJ--I have spent a lot of time in New Zealand over the past few years.
I had a chance to talk to some of the commercial deer hunters, deer farmers, and I have a good friend there who is a vet.
A lot the deer used for velvet and meat (most of the meat goes to Germany) is still obtained by hunters. The markets pay by the weight of the deer for the meat with a lesser price being paid if it is not shot in the head. The velvet is paid for by the gram. The price was running $90 a kilo. The principal markets for velvet to my understanding are Korea and Taiwan who use it for an aphrodisiac and Russia who uses it as a coagulant. This may change or have changed with the current economic problems particularly in Korea and Russia.
I saw a film in New Zealand showing some Chinese using the velvet. They cut a very small sliver (which they like very bloody--It is shipped frozen to Taiwan) and drop it in a glass of whiskey. They then would drink the whiskey. This was costing them $50 a pop.
